I know. Tragic.
Even more tragic is listening to myself whine about going to work when my job is to make cookies all day. And cupcakes, custard, curds, pies, tarts, cakes, muffins, scones and biscuits.
Although I have free reign to create whatever happens to take my fancy on any given day, I have a distinct love for biscuits. As a professional "Made without Gluten" Baker, I am surrounded by goodies of all kinds every day. What most people are surprised to hear, however, is that I'm really not that fond of sweets! Oh, I indulge in a treat here and there, (mostly of the chocolate persuasion), but most of the time I'd much rather belly up to the Carb Bar. When others fight over snickerdoodles, I search for salty snacks. Give me a Classic Lay's potato chip over a brownie, any day!
Biscuits are like a blank canvas to me. In their naked state, they provide a fluffy bed for a thick pat of golden butter, or become the holding zone for a savory blanket of sausage gravy. Since the basic recipe for a buttermilk biscuit is so simple, it is easily adapted to a universe of different applications. Today, I made scores of tea biscuits with honey, and lemon and orange zest to be served alongside heaping bowls of rustic lemon curd. I also made cheddar and chive biscuits, studded with coarse-ground black pepper.
The unpretentious biscuit can be anything you want it to be. Throw in whatever you like! Explore flavor combinations like ham and pineapple, walnut, cinnamon, and goat cheese, sausage and peppers...the possibilities are literally endless.

Prepare the base recipe and then add your own components at the end. Remember to keep everything very cold so the final product is light and fluffy. I even like to chill my mixer bowl and paddle for 30 minutes or so to ensure the butter doesn't get warm while it's working in the mixing bowl. You can also use gluten-free Cup 4 Cup at a 100% substitution.
